Greek Yogurt Papaya Boats

INGREDIENTS

1 medium papaya, ripe

Plain Greek yogurt

1/2 cup blueberries

1 banana

1/2 cup granola

raw honey

chia seeds (optional)

DIRECTIONS

Slice papaya in half lengthwise. Spoon out seeds and scrape away just enough meat to create a small well. Fill each side with yogurt, fruit and granola. Drizzle with honey and sprinkle with a pinch of chia seeds if desired. Voila!

NOTE: This is really more of a process than an exact recipe. You can fill your papaya with anything – cottage cheese, almond butter, any fruit your heart desires. You can even create something more savory by adding chicken or tuna salad. The sky’s the limit, just keep it healthy!
